3 Yummy Chinese Soy Sauce Dishes

Soy sauce is a liquid condiment and seasoning made by fermenting soybeans, grains, and mould cultures or yeast. It is a common ingredient in Chinese cooking and can be used to enhance the flavours of a variety of dishes. Oftentimes, soy sauce may also be used as the main seasoning ingredient in a dish rather than just a flavour enhancer.

Soy Sauce Chicken

A flavourful and comforting chicken dish. This recipe is adapted from Red House Spice.
Ingredients You’ll Need:

Step 1: In a wok or pot, add the oil, scallions, ginger, star anise and bay leaves. Fry them over low heat until fragrant, and the scallions and ginger turn slightly brown.
Step 2: Pour the light soy sauce, dark soy sauce, Shaoxing wine, sugar, and water into the mix. Turn the heat to high and bring the liquid to a boil.
Step 3: Add the chicken thighs into the mix without overlapping them. Adjust the amount of water if necessary. Most of the chicken pieces should be submerged in the mixture.
Step 4: When the mixture comes to a boil, turn the heat down to a gentle simmer. Cover and leave it to simmer for about 35 minutes. Then, flip the chicken thighs and cook for another 10 minutes.
Step 5: Remove the chicken from the mixture and cut them into bite-sized pieces when cool enough to handle.
Step 6: Keep about 120ml of the broth in the wok or pot and heat it up. When it starts to simmer, add the cornstarch mixture and stir until your desired consistency.
Step 7: Pour the thickened broth over the chicken and serve it with rice or other dishes.
Cantonese Steamed Fish

A traditional and simple fish dish. This recipe is adapted from The Woks of Life.
Ingredients You’ll Need:

Step 1: Combine the light soy sauce, salt, sugar and hot water in a small bowl and mix till combined and dissolved. Set aside.
Step 2: Fill a wok with water, about 1 to 2 inches deep. Bring to a boil.
Step 3: Rinse the fish fillet and carefully lay it on a heat-proof plate that will fit into your wok. Place the plate in the wok and turn the heat down to medium.
Step 4: Cover the wok and steam the fish for 7 to 10 minutes depending on the size and thickness of the fish fillet.
Step 6: When cooked, turn off the heat and carefully drain any liquid from the plate. Spread about ⅓ of the scallions, ginger, and coriander on the steamed fish.
Step 7: In a saucepan, heat 2 tablespoons of cooking oil on medium-high heat. Add the remaining ⅔ of the ginger, and fry for 1 minute. Add the white parts of the scallions and cook them for about 30 seconds. Then, add the rest of the scallions and coriander.
Step 8: Add the soy sauce mixture to the saucepan and bring it to boil, about 30 seconds.
Step 9: Pour the mixture over the fish and serve hot.
Taiwanese Soy Sauce Noodles

Healthy, delicious and savoury bowl of noodles. This recipe is adapted from Tiffy Cooks.

Step 1: Boil the noodles in a pot until al dente. Drain and set aside.
Step 2: In a bowl, mix together the soy sauce, black vinegar, sugar and sesame oil, and stir until combined. Add some chilli oil for extra spice.
Step 3: Add the noodles into the bowl of sauces and garnish with coriander and green onion. Serve immediately.
