Enjoying A Bowl Of Homemade Dan Dan Noodles

Dan Dan Noodles with Chili Sauce

Perfect for the days you spend at home watching the rain trickle down your window and listening to the distant sounds of thunder, a bowl of Dan Dan Noodles is rich with spice and heat to warm up both the insides of your body and the atmosphere in your home.


Dan Dan Mian, commonly known as Dan Dan Noodles by some, is a noodle dish originating from Chinese Sichuan cuisine. It is also one of the most famous Sichuan street foods that can be easily found in many Chinese restaurants in Singapore. It is created with chewy thin noodles swirled in a savoury and spicy sauce made with chili oil and pepper, then topped with pork, crunchy crushed peanuts, and green leafy vegetables.


Despite its complicated flavour profile, Dan Dan Noodles are surprisingly very easy to cook. Ingredients You’ll Need:

Other Ingredients

  • Man Kee Chili & Spice Sauce

  • 2 green onions, finely minced

  • 1 tbsp peanut oil or vegetable oil

  • 450g ground pork

  • 1 tbsp minced ginger

  • 2 green onions, chopped

  • 1½ tbsp fermented black beans, rinsed and chopped

  • ½ cup Sichuan preserved mustard greens

  • 2 tbsp Shaoxing wine

  • ½ tsp sugar

  • ⅓ cup roasted peanuts, crushed

  • 400g spinach noodles

  • 1 small batch of leafy green vegetables, roughly chopped

  • Chili oil

Preparing the Sauce


Step 1: Add the Man Kee Chili & Spice sauce to a bowl and mix it together with the green onions, then set it aside.


Preparing the Pork Topping


Step 1: Heat up some oil in a large nonstick pan over medium-high heat until it’s hot. Then, add the ground pork and cook it until the surface is lightly browned, stirring continuously.


Step 2: Turn the heat down to medium heat. Then, add the ginger, green onion, fermented black beans, preserved mustard greens, Shaoxing wine, and sugar.


Step 3: Continue cooking the pork while chopping the pork into small pieces until all the liquid has evaporated and the pork turns into a dark brown colour. Then, transfer it to a bowl and set aside.


Preparing the Noodles


Step 1: In a pot, cook the spinach noodles according to instructions. Then, drain the water and set it aside.


Step 2: Lightly blanch the leafy green vegetables, then drain the water and set them aside.


Assembling


Step 1: Add half of the prepared chili sauce to the empty bowl, then add more chili oil according to your preference


Step 2: Put the noodles in the bowl and top it with a few spoonfuls of the cooked pork and vegetables.


Step 3: Garnish the noodles with your desired amount of crushed peanuts and chopped green onion.


Step 4: Serve and enjoy.
