  • ½ cup butter, softened

  • ¾ cup granulated sugar

  • 1½ tsp baking powder

  • 1 egg

  • 2 cups all-purpose flour

  • ⅓ cup finely chopped ginger candy

  • ¾ coarse white decorating sugar

Step 1: Place the butter in a large mixing bowl and beat it with an electric mixer on medium to high speed for 30 seconds. Add granulated sugar, baking powder, and salt. Beat until combined, scraping the bowl occasionally.

Step 2: Beat in the egg until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour, ginger candy, and orange peel. Use your hands to knead the mixture until it comes together.

Step 3: Sprinkle and spread some flour on a work surface. Divide the dough into three equal parts and place them on the lightly floured surface. Shape each portion into a 7-inch roll.

Step 4: Spread some coarse sugar on waxed paper and roll each dough in the coarse sugar to coat, pressing lightly as you roll. Reshape the rolls after if necessary.

Step 5: Wrap each roll in waxed paper or plastic wrap. Chill in the refrigerator for 2 to 3 hours or unti the dough is firm enough to slice.

Step 6: Preheat the oven to 175℃. Cut the rolls into ¼-inch slices and place them 1 inch apart on an ungreased cookie sheet. Brush the dough lightly with additional milk and sprinkle with the remaining coarse sugar.

Step 7: Bake them for about 8 minutes or until the edges are lightly browned. Transfer the cookies to a wire rack to cool completely.

Ingredients You’ll Need:

  • 1½ cups whole sesame seeds

  • Vegetable oil cooking spray

  • 1 cup sugar

  • 1 cup dark corn syrup

  • ¼ cup water

  • 2 tbsp unsalted butter

  • ⅓ cup coarsely chopped ginger candy

  • 1 tsp baking soda

  • Salt

  • A candy thermometer

Step 1: Preheat the oven to 170℃. Toast the sesame seeds on a baking sheet until they turn pale golden brown, for about 13 minutes.

Step 2: Coat another 12-inch by 17-inch baking sheet with cooking spray. Bring sugar, corn syrup, water, and butter to a boil in a small saucepan, stirring constantly.

Step 3: Reduce the heat to medium-high. Cook, without stirring, until the temperature reaches 145℃. Remove from heat and stir in the sesame seeds, ginger candy, baking soda, and ¼ teaspoon salt.

Step 4: Pour the mixture onto the coated baking sheets and spread into an even ½-inch-think layer. Let it cool completely. Then, cut into pieces.
