XO Sauce Singapore

XO sauce in Singapore is a condiment that was produced in the early 1980s at one of Hong Kong's high-end eating places.  It's a thick mixture of dried shellfish, Chinese aged ham, and other flavours. It was an instant success. However, XO sauce is far more than a mere condiment. Its rich flavour goes nicely with stir-fried meat, shellfish, tofu, and vegetables, as well as noodle recipes.

According to stories, the cook who created XO sauce named it after the expensive drink at that time which is known as XO cognac. Despite the rumours, XO sauce does not contain XO Cognac.
